My friend’s mother is Polish and gave me this simply fantastic recipe for rollmop – just add finely chopped white onion and apple, a splash of double cream, and mix it all together – it sounds weird, but it is AMAZING!

Also, try it with a dash of cinnamon, you can buy rollmop herring with cinnamon in the food market at IKEA stores.
