Why it's taking me forever to finish consuming "The Daily Soup Cookbook" — 4 years ago

Another two down (I’ve been eating soup out of a box from Trader Joe’s and ramen lately):

  • Cuban Black Bean (decent, not amazing)
  • Cincinnati Chili (interesting seasonings, not very hot, tasty though)

I think I made the cream of lentil but I can’t remember so I’ll make it again at some point.

Soup is good food.

Another three down:

  • Vichyssoise (great summer soup, pretty easy)
  • New Zealand Sweet Potato Chowder (on the cheaper side as far as ingredients go and easy! good! hello vitamin A!)
  • Tuscan Shrimp and White Bean (umm… should have made sure the beans were cooked all the way through. oops)

Why it's taking me forever to finish consuming "The cook's encyclopedia of vegetarian cooking" — 5 years ago

Surprisingly good for a bargain bin book – well illustrated, with pictures of the finished dishes as well as pictures of the intermediate steps, which is good for people who bungle things a lot like me. 160 recipes in total, I’ll try at least 40 before marking this done.

Eight down so far:

  • Asparagus Soup (easy, pretty yummy food processor fun)
  • Asparagus with Eggs (kind of a strange but somehow tasty combo)
  • Tomato, Scallion, and Cilantro Salad (good to eat with spicy food)
  • Sauteed Potatoes (no, I couldn’t sautee potatoes right before this)
  • Straw Potato Cake (good, unless you accidentally drop it on the floor)
  • Garlic Mashed Potatoes (probably the best recipe for this that I’ve ever found)
  • Bok Choy with Soy Sauce (you don’t really need a recipe for this.. hrmph)
  • Corn Cakes (these are good in theory but I can’t get the consistency right)

96 soup recipes total, from my one of my favorite (now defunct) NYC eateries. I’ll mark it done when I’ve tried 30 or so, which at the rate I take, will probably be forever. But I want to cook more!

So far I’ve made:

  • Borscht (lots of prep, though would make again – beeeets!)
  • Salmon Potato Chowder (easy! good!)
  • Vegetarian Split Pea (I remember something bad happening with the food processor, and it being kind of bland. I probably did something wrong. The page is also waterlogged. Hm.)
