This book has amazing info on different breads that the author, Peter Reinhart, has experienced in his time. The formulas need a little tweeking, but the technique info is good.

WORTH CONSUMING!
This is one of Peter Reinhart’s amazing books on bread. Great info for home bakers and professionals alike. As with most of his books, however, the formulas need to be worked with a little.
