Macaroni salad is one of those things that is either really good or totally nasty. It varies depending on where and when consumption occurs. Your mom’s macaroni salad on a nice day at a picnic with some good barbecue and a frosty beer? Really good! A little plastic cup filled with macaroni salad slopped onto your tray at a truck stop in the middle of nowhere on a rainy afternoon? Gross.

This is my ultimate summer dish. I go to our local farmers market, pick out a variety of tomatoes (zebras, black russians, romas, goldens), and some big beautiful basil. Served up with fresh mozz, s&p, a drizzle of great olive oil and some crusty rustic bread…. the dish is out of this world…. Mmmmmmm… intergalactic caprese…

Everytime my mom would make couscous, she would regale me with tales about her trip to Morocco, and how my Dad, despite being an idiot and walking around the markets with a big, bulging wallet in his back pocket, never got jacked.

It was the nicest thing she could muster to say in the midst of a divorce, I guess.
