I have almost all of the ingredients for this. It’s actually from the “Veganicomicon” book and it’s a Mushroom and Spinach Strata", but I didn’t have the mushrooms or the spinach. I used some frozen stir-fried veggies instead and it’s in the oven as I type this. Should be good! At least I hope so. I want to take a photo of it soon.
