I am careful to only eat this fish on occasion—not that I do not love it but rather because I know there is a tendency for it to be overfished. It is probably one of my favorites, however.
Delicate but substantial texture, holds up well for grilling. Mild flavor yet complex: carresses the palate, appeases the senses.
