I really don’t like melon. Sure, watermelon’s good, but canteloupe/musk melon/honeydew just rub me the wrong way. But in this, it’s perfect. Something about the salty richness of the prosciutto blends nicely with the mild sweetness of the melon, and it doesn’t really taste like melon so much as silky deliciousness. It sounds like a decadent treat but it doesn’t cost much and it’s SUPER easy to make. I soak my melon pieces in port for 20 minutes, then pat them dry, dust them liberally with freshly ground pepper, then wrap them in the prosciutto and chill for about 20-30 minutes. Delicious on their own or with a glass of port. Heavenly!
