I must first say, however, that I stand corrected. It’s Irish Coffee trifle, not Baileys trifle, but frankly you could call it Mouldy Potato trifle and it would taste just as good :P
Here goes:
Coal’s Mum’s Irish Coffee Trifle
6oz trifle sponges
4 tblsp whisky
3oz caster sugar
2 egg yolks
1/2 pt double cream
2 tblsp instant coffee
3oz cornflour
1pt milk
1oz butter
1/4 pt whipping cream
1. Mix up 3 tblsp of the whisky and 1 tblsp of the coffee. Place the sponge fingers into your serving bowl and pour the mixture over them. Leave them to soak whilst you get on with everything else.
2. Mix the cornflour and sugar with just a little of the milk. Heat the remainder of the milk and stir into the cornflour flour mix, then return the whole lot to the pan and bring to the boil, stirring constantly until thickened. When thickened take off the heat and beat in the egg yolks, butter and the remaining whisky and coffee. Cover and leave to cool.
3. When the mixture has cooled, whip the double cream (so it’s not runny, but not too stiff) and fold it in. Scoop this mixture over the top of your coffee and whisky sponges in the serving bowl.
4. Finally, whip the whipping cream and swirl over the top of your trifle.
I hope all that made sense! It’s a bit fiddly to make but it is soooo worth it. Let me know if you make it. Send pictures! :)
